Shining Armor and Cadence's spell didn't just blow them out of Canterlot and Equestria - it blasted them all the way off into space. They look superficially like ponies for the same reason why [[Human Aliens\|many aliens in most media look at least partially humanoid]]. They know Equestria's language because of either some kind of telepathy, or because the Queen has been masquerading as a pony and preparing the invasion long enough to learn it (the other Changelings may not even know it at all, the only time they speak, they just imitate the sound of Twilight Sparkle's voice).
